Oriental Shrimp Toast PointsShrimp mix:
2 pounds raw shrimp
2 tablespoons sesame oil
2 tablespoons cilantro, chopped
2 tablespoons garlic, chopped
1 teaspoon ginger root, chopped
1 egg white
1/4 cup heavy cream
Kosher salt
Pepper
Seasame seeds
1 loaf pullman bread, unsliced
Dipping sauce:
1/4 cup seasame oil
1 1/2 cups rice vinager
Pinch of crushed red pepper
1 tablespoon brown sugar
1 tablespoon sherry
1 teaspoon garlic
1/4 cup V-8 juice
1. In food processor, puree shrimp with oil, cilantro, garlic and ginger until it balls up. Scrap sides down. Add egg white and puree until it balls again. Scrape and add cream, count to 10, stop and take out and fold in salt, pepper and sesame seeds.
2. Slice bread long ways and spread shrimp mixture on bread.
3. Cut into triangles.
4. Bake triangles at 300 degrees for 15 minutes.
5. Mix all ingredients together for sauce.
