Cucumber Soup

3 medium cucumbers, peeled and coarsely chopped

1/2 cup chopped onion, scant

2 cups chicken broth

2 cups sour cream

3 tablespoons white wine vinegar

1/2 teaspoon salt

1/4 teaspoon white pepper

1 clove minced garlic


1. Place cucumbers, onions, garlic and chicken broth in blender or food processor. Blend well.

2. Place in large container, stir in sour cream, vinegar, salt and pepper. Chill.

3. May be garnished with chopped tomatoes and green onion tops.
