Pepperoni-Broccoli Delights 3 dozen thin slices pepperoni
1/2 of 10-ounce package chopped broccoli, thawed and drained
1 cup ricotta cheese
3/4 cup Parmesan cheese, grated
2/3 cup chopped mushrooms
2 tablespoons chopped onions
2 eggs, beaten
1/2 teaspoon oregano
Salt and pepper to taste
1. Grease mini-muffin pans. Place a slice of pepperoni in bottom of each muffin cup.
2. Mix remaining ingredients. Spoon the mixture into muffin pans.
3. Bake at 350 for 20 minutes, until puffed and set. Turn out snacks so the pepperoni slices are on top. Serve warm.
