Bulgur Marinated Salad

1/2 cup bulgur (can be bought at bulk stores)

1 1/4 cups water

1 can peas, drained

1 can French cut string beans, drained

1 can shoe peg corn, drained

1 small jar diced pimentos, drained

1 green pepper, diced

1 small onion, diced

3 stalks celery, diced

1 cup sugar

3/4 cup white vinegar


1. Add bulgur to water in a covered saucepan over low heat. Cook about 20 minutes. When water has absorbed, remove from heat. Let stand for 10 minutes, then fluff with fork.

2. Add all vegetables to the bulgur. Set aside.

3. Boil sugar and white vinegar until sugar is dissolved. Pour over bulgur and vegetables.

4. Chill several hours before serving. Makes a lot.
