Sweetheart Salad

1 can (20 ounces) crushed pineapple, drained

1 small package lemon Jell-O

4 ounces cream cheese, room temperature

10 maraschino cherries, finely cut

3 tablespoons cherry juice

1 1/8 cups whipped cream


1. Heat 1 1/2 cups liquid (pineapple juice, plus water). Disolve gelatin in liquid, add pineapple, cool.

2. Mash cheese, add cherries and juice to cheese. Mix with gelatin and pineapple.

3. Cool until slightly thickened. Fold in whipped cream.
