Amerithai Salad 1 cup broiled diced chicken
1/2 cup thin sliced cucumber
1/2 cup shredded carrots
1 cup diced tomatoes
1/2 cup shredded spinach
1/2 head lettuce
4 tablespoons vinegar
1/4 cup cilantro
1 teaspoon salt
1/3 cup shredded jalepenos
1. Blend tomatoes, cilantro, vinegar and salt in a large bowl.
2. Add all remaining ingredients and serve chilled.
