Veggie Bacon Rice Dish 1/2 pound low-fat turkey bacon
1 cup rice
2 cans (15 ounces each) low-salt beef broth
1 garlic clove
1 small onion
1 small tomato
6 collard leaves
1. Cook bacon and then slice it into small pieces.
2. Dice the garlic, onion, tomato and collards. In a deep frying pan, combine all of the ingredients.
3. Bring to a boil. Reduce heat to low and let simmer for 20 minutes.
4. Stir occasionally. Serves about 2 people.
