Health-Wise Coffee Cake

3 cups flour

1 1/2 teaspoons baking soda

1 1/2 teaspoons baking powder

1 1/2 cups Raisin Bran cereal

1/4 teaspoon ground mace

1/4 teaspoon ground allspice

RC1 2 1 cup honey

1 3/4 sticks light margarine

1 cup plain yogurt

3 large eggs (or equivalent in egg beaters)

1 teaspoon vanilla


1. Lightly spray 13-by-9-by-2-inch pan with Pam and lightly flour. Set aside. Pre-heat oven to 350 degrees.

2. In large mixing bowl, combine all dry ingredients. Cream in margarine. Add wet ingredients and mix thoroughly by hand.

3. Pour half of this mixture into greased and floured pan.

4. Sprinkle with half of the following mixture: 1 cup brown sugar, 1 cup chopped almonds and 2 teaspoons ground cinnamon.

5. Layer remaining batter over filling. Sprinkle last half of topping mixture on batter.

6. Bake in preheated 350 degree oven for 40-45 minutes or until toothpick comes out clean when tested in center of cake. May be served warm with herbal tea or gourmet coffee.
