EATING LIGHT: WINNER

Sharpsville woman cooks up a winner with Spinach Strata

Long before The Herald judges named it the winner in the Eating Light category, Lynsie Fedorko's Creamy Lite Spinach Strata had already passed one important test.

Before entering it in The Herald's ``What's Cookin' in Your World?'' recipe contest, the Greenville native, who lives now in Sharpsville, said she tried it out on her future in-laws. They loved it and so did our judges.

Cooking up winning recipes is nothing new for Ms. Fedorko. ``I've loved to cook since I was a little girl,'' she said. ``I love recipes. Whenever anyone doesn't know what to get me, get me recipes.''

While she has plenty of recipes in her own collection, Ms. Fedorko said she found her award-winning entry in an old cookbook of her mother's. ``It just looked interesting, something I thought would attract someone's eye,'' she said.

Although she looks to recipes for inspiration, Ms. Fedorko said she doesn't hesitate to rewrite them. ``If I can add something to it, I will. If it's something I'm not so sure of, I leave it alone.''

Ms. Fedorko will soon be getting a chance to try out some new recipes. She was hired recently at Max-Ann's Pastry Shop in Hermitage.

She traces her love of cooking back to her mother and grandmother, who began to teach her to cook when she was about 6.

Even before she had been announced as the winner in her category, Ms. Fedorko said, ``I'm just excited to be here as a finalist.''

Her winning entry was in the Eating Light category, but Ms. Fedorko said she cooks all sorts of things, ``whatever catches my eye.''


Creamy Lite Spinach Strata

2 packages (10 ounceseach) frozen chopped spinach, thawed

1 cup Pepperidge Farm stuffing mix

1 1/2 cups light mozzarella cheese

1 cup lite sour cream

1 cup lite creamed cottage cheese

2 eggs

1 small onion, chopped

1/4 cup light margarine, melted

1/2 cup biscuit baking mix

1/3 cup Parmesan cheese


1. Butter a 7-by-11-inch baking dish. Layer, in order, thawed spinach, stuffing mix and mozzarella cheese.

2. In a blender, mix remaining ingredients until well blended. Pour on top of spinach mixture.

3. Sprinkle with Parmesan cheese. Bake at 350 degrees for 30-40 minutes.
