Lemon Broccoli Chicken

4 skinless, boneless chicken breast halves

1 can cream of broccoli soup

1 lemon

1 tablespoon vegetable oil

1/4 cup skim milk

1/8 teaspoon pepper


1. In skillet, brown chicken in the hot oil. Cook about 10 minutes, until browned. Remove chicken breasts, set aside. Remove or spoon of fat.

2. Cut 4 thin slices of lemon, squeeze juice from remaining lemon.

3. In skillet, combine lemon juice, pepper, soup and milk. Heat to boiling.

4. Return chicken to skillet, top with lemon slices. Cover and cook over low heat 5 minutes or until chicken is no longer pink.

5. Garnish with fresh thyme if desired. Serves 4.
