Chili

Vegetable cooking spray

1 pound low-fat ground beef

1 cup chopped onion

1 cup chopped green pepper

6 cloves garlic, minced

2 cans (14 1/2 ounces each) no-salt-added stewed tomatoes, undrained and chopped

1 can (16 ounces) no-salt-added kidney beans, drained

1 can (8 ounces) no-salt-added tomato sauce

1 envelope (1 ounce) onion soup mix

1 cup water

3 tablespoons chili powder

1 tablespoon paprika

1 1/4 teaspoons hot sauce


1. Coat a Dutch oven with cooking spray; place oven medium-high heat until hot. Add ground beef, brown, stirring until it crumbles. Drain and pay dry with paper towels. Wipe drippings from Dutch oven.

2. Recoat Dutch oven with cooking spray. Add onion, green pepper and garlic. Cook over medium heat, stirring constantly, until tender.

3. Add ground beef, stewed tomatoes and remaining ingredients.

4. Bring to a boil. Cover, reduce heat and simmer 30 minutes, stirring occasionally. Nine servings.
