Italian Stuffed Meatloaf 2 eggs
6 ounces tomato paste
1/2 cup bread crumbs
1/4 cup chopped peppers
1/2 cup chopped onion
1/2 teaspoon salt
1/8 teaspoon pepper
1 1/2 pounds ground meat
Cheese mixture:
1/2 cup bread crumbs
1 1/2 cups cottage cheese
1/2 cup (3 ounces) chopped, cooked mushrooms
1 tablespoon parsley
1/4 teaspoon oregano
1. Mix well eggs, tomato paste, 1/2 cup bread crumbs, peppers, onions, salt, pepper and ground meat. Pat 1/2 meat mixture into loaf pan.
2. Combine cheese mixture and spread over meat in loaf pan. Top with remaining meat mixture.
3. Bake at 350 degrees for 50-60 minutes. Set 10 minutes before serving. Serve with a side of pasta and fresh green salad.
