Tofu Nut Loaf

1 tablespoon oil

3 stalks celery, chopped

2 cloves garlic, minced

1 large onion, chopped

1 sweet red or yellow pepper

2 pounds tofu

1 cup Bulghur wheat, softened by soaking in water

1/3 cup TVP (textured vegetable protein _ health food stores carry this)

1/3 cup toasted sesame seeds, toast in dry skillet

1/3 cup pecans, chopped

2 teaspoons sea salt

1/2 teaspoon cumin

1 teaspoon black pepper

1/3 tahini (seasame butter _ health food stores)

3 tablespoons miso or amino liquids (health food stores)





Fig sauce:

2 cups red wine or mirin

1 cup vegetable broth

1/2 pound dried figs, cut in quarters

1/3 cup honey

1 tablespoon orange juice

1 tablespoon lemon juice

1 teaspoon powdered cloves

1/2 teaspoon thyme

2 cloves garlic, minced


1. Saute, in a medium saucepan with oil, chopped celery, garlic, onion and red or yellow pepper, until onions are tender. About 10 minutes.

2. While veggies cook, mash in a large bowl, tofu, bulghur wheat, TVP, sesame seeds, pecans, sea salt, cumin and black pepper.

3. In a small bowl with the back of a fork, blend the tahini and the miso or amino liquids together.

4. Preheat oven to 350 degrees. Combine all ingredients. Bake in loaf pan for 30 minutes or until top is browned.

5. Serve with fig sauce.

6. For fig sauce, in saucepan combine all ingredients for fig sauce and heat to boiling. Boil 5 minutes. Lower heat and simmer for 45 minutes, covered.

7. Puree 1/2 mixture and return to saucepan. Serve over tofu nut loaf.
