Filet Mignon with Red Onion Confiet 1 (6 to 8 ounce)filet mignon
1/2 cup red wine
1 clove garlic
1/2 tablespoon oregano
1/2 tablespoon rosemary
2 red onions
2 1/2 tablespoons butter
1/4 cup brown sugar
1/2 cup red wine
1/4 cup red wine vinegar
1. Marinate filet for 2 hours in red wine, clove garlic, oregano and rosemary.
2. Grill or pan sear filet then finish in oven for 5 to 8 minutes until medium rare doneness.
3. Slice onion and saute butter, add brown sugar and cook until well caramilzed.
4. Add vinegar and let reduce.
5. Add red wine and reduce again. Serve hot.
