Skillet Beef Supreme 1/2 pound lean beef
2 tablespoons olive oil
1 medium white onion, sliced
1 medium green pepper, cut in strips
1 medium red pepper, cut in strips
1/2 pound sliced mushrooms (10 ounce box)
4 teaspoons cornstarch
1 tablespoon soy sauce
1 cup sliced celery
1 cup sliced fresh green beans
Salt to taste
1. Cut 1/2 pound lean beef into strips and brown in olive oil. Add onion and green and red peppers. Add celery and green beans. Cook about 5 minutes.
2. Combine 4 teaspoons of cornstarch with the tablespoon of soy sauce and 3/4 cup water; add to skillet and stir well. Then stir in sliced mushrooms.
3. Cook about 10 minutes, stirring until liquid is clear and shiny, and beans are tender. Salt to taste. Serve with rice. Serves 4.
