Chicken Cacciatore 1 can (6 ounces) tomato paste
1 can (4 ounces) mushrooms, drained and sliced
1/2 cup water
1/2 cup onion, chopped
1/2 cup bell pepper, chopped
1/2 cup dry white wine
1 1/4 cups uncooked quick rice
2 tablespoons parsley, chopped fresh
1 can (14 ounces) chicken broth
1 cup mozzarella cheese, shredded
1/4 cup Parmesan chese
6 chicken breast fillets
1/4 teaspoon black pepper
1/2 teaspoon Italian seasoning
1 teaspoon garlic salt
2 teaspoons basil
1. Spread rice in bottom of lightly greased 13-by-9-by-2-inch baking dish.
2. In small bowl, stir together all ingredients (except chicken and cheeses,) plus 1 tablespoon of parsley; pour over rice.
3. Arrange chicken on top of rice mixture. Bake, covered, at 350 degrees for 45-50 minutes. Uncover casserole, sprinkle mozzarella, then Parmesan cheese over top and bake 5 minutes longer.
4. Sprinkle remaining parsley over top just before serving. Serves 6.
