Cheese Beans

3 cup fully cooked, drained pinto beans

1 cup chopped onion

1/3 cup chopped green pepper

1 large peeled tart apple cut in 1-inch chunks

1 cup grated mild cheese

2 medium tomatoes, chopped

1/4 cup dry white wine or apple juice

1 teaspoon chili powder

1/2 teaspoon dry mustard

1/4 teaspoon salt

1/2 teaspoon black pepper


1. Saute onion and pepper in small amount of butter until soft. Add remaining ingredients. Pour into large greased baking dish.

2. Cover and bake at 350 degrees for 45 minutes. Turn off oven. Remove lid from dish and leave uncovered in cooling oven for 30 minutes, stirring 2-3 times.

3. Serve warm with fresh corn bread.
