Stacked Pie

1 cup butter

2 cups of sugar and 2 teaspoons of cornstarch, mixed

1 cup coffee cream

7 egg yolks

2 teaspoons vanilla


1. Cream butter, sugar with cornstarch, add egg yolks. Beat well then add cream and vanilla.

2. Pour into 4 unbaked pie shells. Bake at 400 degrees for 10 minutes and finish baking at 350 for 20 minutes or more. (Test as if you were testing custard pie.)

3. While pies are baking, beat 7 egg whites, but not stiff and add 1/2 teaspoon and a pinch of cream of tartar. Continue to beat and add 1 cup of sugar gradually, add 1 teaspoon of vanilla.

4. Put meringue on top of pies while hot and continue to bake for 10 minutes. Stack pies while hot.
