Chocolate Zucchini Bread

1 1/2 cups all-purpose flour

1/4 teaspoon baking powder

1/2 teaspoon salt

1/2 teaspoon baking soda

2 eggs

1 cup sugar

1/2 cup vegetable oil

1 teaspoon vanilla extract

1 ounce unsweetened baking chocolate, melted

1 tablespoon melted butter or margarine

1 cup shredded zucchini

1/2 cup chopped walnut or pecans


1. Sift flour, baking powder, salt and baking soda together. Set aside.

2. Beat eggs, sugar, oil and vanilla extract in mixing bowl until smooth.

3. Add sifted dry ingredients and mix well.

4. Stir in melted chocolate, butter, zucchini and walnuts.

5. Pour into greased and floured 5-by-9-inch loaf pan. Bake at 350 degrees for 40-45 minutes or until loaf tests done.

6. Remove to wire rack to cool.
