Oatmeal Cake

1 1/4 cups boiling water

1 cup quick cook oats

1/2 cup shortening

1 cup brown sugar

1 cup white sugar

2 eggs

1 teaspoon vanilla

1 teaspoon baking soda

1 teaspoon salt

1 teaspoon cinnamon

1 1/2 cups flour





Topping:

1/4 cup butter or oleo, melted

1 cup coconut

1 cup nuts, chopped

1/2 cup milk

1 cup brown sugar


1. Pour boiling water over quick oats and stir. Let stand 20 minutes.

2. Cream shortening, sugars and eggs. Add oatmeal and vanilla.

3. Add dry ingredients and mix thoroughly.

4. Bake in a greased 13-by-15-inch pan at 350 degrees for 25 minutes or until done.

5. For topping, combine all ingredients and spread on cake as it comes from the oven.

6. Bake under broiler just until it bubbles and coconut is browned a little, about 5-10 minutes.
