Orange Puff Dessert

3 envelopes of unflavored gelatin

3/4 cup cold water

3/4 cup boiling water

1 1/2 cups orange juice

2 tablespoons lemon juice

1 1/2 teaspoons grated orange peel

3/4 cup sugar

2 1/2 cups whipping cream

3/4 cup sugar


1. In a large bowl, combine unflavored gelatin and cold water. Let stand for 10 minutes.

2. Add boiling water and stir until gelatin is dissolved.

3. Add orange juice, lemon juice, grated orange peel and 3/4 cup sugar,mix and allow to stand in refrigerator until syrupy.

4. Whip whipping cream until soft peaks form and gradually add 3/4 cup sugar and beat until stiff peaks form.

5. After gelatin is syrupy, cream stiff, mix by folding gelatin into whipping cream.

6. Lightly spray springform pan with Pam and pour mix in allowing it to set in refrigerator overnight.

7. Invert, remove pan and decorate with mandarian orange sections and cherries. Serves 10-12.
