Ginger-Coconut Drops 2 cups whole wheat flour
1/2 teaspoon salt
1 teaspoon ground ginger
1 cup grated unsweetened coconut
1/2 cup honey
1/2 cup canola oil (health food stores)
2 eggs, beaten
1 teaspoon vanilla
1. In medium-size mixing bowl, mix together flour, salt, ginger and coconut. Add remaining ingredients and mix well.
2. Drop by rounded teaspoons onto oiled cookie sheet.
3. Bake at 375 degrees for 10 minutes or until cookie bottoms are golden brown. Remove immediately and cool on wire rack. Makes about 3 1/2 dozen.
