Apple Cheddar Dessert 8 medium cooking apples, peeled, cored and thinly sliced
1 lemon
3/4 cup brown sugar, packed
1/3 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 cup coarsely chopped walnuts
1 cup raisins
10 sheets phyllo dough
1/2 cup sweet butter, melted
1 1/2 cups shredded sharp Cheddar cheese
1. Place apple slices in large mixing bowl. Grate rind from lemon. Then squeeze juice over apples. Toss apples with brown sugar, flour, cinnamon and nutmeg. Stir in walnuts, raisins and grated rind. Set aside.
2. Stack together 5 sheets phyllo dough, brushing between each layer with the melted butter. Carefully fit the 5 buttered sheets into a 9-inch springform pan, letting edges hang over top of pan.
3. Spoon apple mixture into pan. Sprinkle with cheese. Fold edges of dough over apples and cheese.
4. Butter and stack remaining 5 sheets. Remove sides of springform pan. Place stack over top and tuck ends under or trim away with knife or kitchen shears. Carefully replace sides of pan.
5. Place pan on baking sheet to prevent butter from dripping into oven. Bake at 400 degrees for 50 minutes or until golden brown. Serves 8-10.
