Chocolate Marshmallow Bars

3/4 cup oleo

1 1/2 cups sugar

3 eggs

1 teaspoon vanilla

1 1/3 cups flour

1/2 teaspoon baking powder

1/2 teaspoon salt

3 tablespoons cocoa

1/2 cup nuts, chopped, optional





Topping:

8 ounces chocolate chips

3 tablespoons oleo

1 cup peanut butter

2 cups Rice Crispy cereal


1. In bowl, cream together 3/4 cup oleo, sugar, eggs and vanilla.

2 Combine together the flour, baking powder, salt, cocoa and nuts and add to the oleo mixture.

3. Spread in a greased 15 1/2-by-10 1/2-inch pan and bake at 350 degrees for 15-18 minutes. Remove from oven and put 4 cups of minature marshmallows on hot bars, return to oven 2 to 3 minutes. Using a knife, dipping in water, spread melted marshmallows evenly over top. Cool.

4. For topping, combine chocolate chips, tablespoons oleo and peanut in pan. Put on stove over low heat, stirring contantly until melted. Stir in cereal. Spread over bars.

5. Chill until firm. Yield: 3 dozen. (Extra may be frozen.)
