Walnut Meltaways

2 eggs whites, room temperature

1/2 cup sugar

1/8 teaspoon cream of tartar

1/2 teaspoon vanilla

1/2 cup finely chopped walnuts


1. Beat egg whites until foamy; add cream of tartar. Beat until soft peaks form.

2. Gradually add sugar until peaks are stiff. Add vanilla then fold in chopped walnuts.

3. Drop by heaping teaspoonful onto lightly greased cookie sheet about 2 inches apart.

4. Bake at 225 degrees for 50 minutes. Cool for 20 minutes on cookie sheet before removing. Cool completely before storing.
