Ritz Cookies

1 cup chopped dates

1 cup sweetened condensed milk

1/2 cup chopped nuts





Frosting:

4 ounces lite cream cheese

1/4 cup softened oleo

1/2 teaspoon vanilla

2 cups or more confectioner's sugar


1. Blend dates and milk in top of double boiler. Cook, mashing an stirring often (about 10 minutes) until thick. Add nuts, cool.

2. Spread a little dob on a cracker and bake at 350 degrees for 6-8 minutes. Cool.

3. For frosting, mix together cream cheese, oleo, vanilla and confectioner's sugar until consistency to spread. Spread on each cookie.

4. Then freeze until set. Pack and store in freezer. Unfreeze a few at a time for a delicious treat. (If on a salt-reduced diet, salt-free Ritz crackers work fine.
