Black Bottom Mini Cupcakes




Cheese mixture:

1 package (8 ounces) cream cheese, softened

1 egg

1/3 cup sugar

1 package (6 ounces) package semi-sweet chocolate chips





Black Bottom Mixture:

1 1/2 cups flour

1 cup sugar

1/4 cup cocoa

1 teaspoon baking soda

1/2 teaspoon salt

1 cup water

1/3 cup oil

1 teaspoon vanilla

1 teaspoon vinegar


1. To prepare cheese mixture, in a small bowl combine cream cheese, egg and sugar. Beat well then stir in chocolate chips. Set aside.

2. For the black bottom mixture, combine all dry ingredients in a large bowl. Make a well and add the water, oil, vanilla and vinegar. Mix well until smooth.

3. Using nut tasse pans and midget baking cups, fill each 1/3 full with black bottom mixture. Top with a teaspoon of cream cheese mixture.

4. Bake at 350 degrees for 25-30 minutes. Makes 4 dozen.

5. For holiday varieties, add food coloring to the cream cheese mixture (red and green for Christmas; red/yellow to make orange for Halloween, etc.) and use decorative midget baking cups.
