Country Apple Muffins

1 1/2 cups all-purpose flour

1 cup uncooked quick rolled oats

1/3 cup firmly packed brown sugar

2 1/2 teaspoons baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

2/3 cup plain applesauce

1/3 cup milk

1 egg

1 teaspoon vanilla extract

1/4 cup plus 1 tablespoon Shedd's Spread Country Crock Spreadable Sticks, melted

1 1/2 large peeled apples, chopped fine


1. Combine dry ingredients in bowl. Add applesauce, milk, melted Shedd's Spread, egg and vanilla. Mix throughly. Stir in apples.

2. Fill muffin cups or paper muffin cups (your choice) 3/4 full and bake at 400 degrees for 18-20 minutes.

3. Carmelize sugar to drizzle on plate, place 3 apple slices along side of muffin for presentation.
